All about honey our honey
What does raw / unfiltered honey’ mean?
Our honey is minimally processed and not finely filtered.
After extraction, we strain it through coarse screens to remove particles created during uncapping and extraction (for example, small pieces of wax).
Why don’t we filter the honey?
Filtering with fine filters or sieves removes some of honey’s natural particles, including pollen, which can reduce its aroma and flavor.
How do we test the quality of honey?
Before being approved for sale, every batch of honey is sent to a laboratory in Germany (QSI GmbH), where it is tested against more than 700 different parameters.
Where can you see the lab test reports?
The analysis results for each specific batch are published in the honey description. A more detailed explanation of the analyses is available in the ‘Meet the Beekeeper’ section. There you can learn about the beekeeper who harvested the honey, where it was harvested, and view the batch’s test results.
What does ‘single-origin’ / ‘limited batch’ mean?
Single origin – The honey comes from one specific apiary location and is fully traceable, even to the specific meadows where it was harvested.
Limited batch – The honey is harvested in a small, clearly defined quantity and is available only as long as this batch lasts. Once it’s sold out, it won’t be available again until the next season. Each individual batch is tested and has its own lab analysis.
Why does each batch taste and look different?
In nature, producing two identical batches of honey is practically impossible. Every meadow is different, and weather conditions and harvest timing have a major impact on honey’s taste and color. Even honey harvested from the same meadow can vary significantly from one season to the next.
About storing honey
How should honey be stored properly?
It’s important to consider how much honey you’re storing.
If it’s a small amount (up to around 300 g) that you use daily, you can safely keep it in the kitchen—on the counter or anywhere that’s convenient.
If you’ve purchased a larger quantity to store for the winter, it’s best to store your honey like this:
1. Keep it tightly sealed so the honey doesn’t absorb moisture or surrounding odors.
2. Store it in a dark, cool place with a stable temperature—ideally around +15 to +20 °C (a pantry or cupboard).
3. Avoid direct sunlight and keep it away from heat sources such as radiators, stoves, etc.
4. Honey can be stored in the refrigerator, but it isn’t necessary—refrigeration won’t improve its quality or extend its shelf life.
Is it normal for honey to crystallize?
Yes — any natural honey will crystallize sooner or later.
This is completely normal: it’s a natural property of honey and does not mean it has gone bad.
Honey is a supersaturated solution of natural sugars, mainly glucose and fructose.
If honey contains a higher proportion of glucose, it will crystallize faster—over time, glucose forms crystals and the honey becomes thicker.
If honey contains more fructose and less glucose, it crystallizes more slowly (and in some cases may stay liquid for several months after harvest).
So, the crystallization process is mainly influenced by:
• the sugar composition of the honey (glucose/fructose),
• the storage temperature,
• pollen and other natural particles, which can act as “seeds” for sugar crystals to form.
How can you make honey liquid again?
Place the jar in a warm water bath and heat it gently, stirring occasionally if possible. Keep the temperature at about 40°C (max 40–45°C) to preserve aroma and natural properties. Avoid microwaving or direct heat, as honey can overheat unevenly.
It’s important not to overheat honey, because high temperatures reduce its natural quality. Heat can fade the aroma and delicate flavor notes, making the honey taste “flatter,” and it also reduces the activity of natural enzymes. With prolonged heating, honey may also develop signs of thermal stress, such as darker color and a cooked/caramel-like aftertaste.

Safety & Allergens
Is honey safe for infants?
According to recommendations from health authorities (e.g., the CDC and the NHS), honey should not be given to infants under 12 months of age due to the risk of botulism.
Allergies or sensitivity to pollen?
If you have allergies (especially sensitivity to pollen or bee products) or notice signs of an allergic reaction, stop using honey and consult a doctor.
Consume in moderation!
Since the sugars in honey are considered “free sugars,” doctors recommend consuming honey in moderation and avoiding excessive intake.
